Baked Zucchini Sticks

These baked zucchini sticks are a perfect side or great for a snack on their own. Try dipping in marinara sauce!



2 Large Eggs
1 cup Whole Wheat Bread Crumbs
3 Medium Zucchini Cut Into Sticks
1/2 cup Shredded Parmesan Cheese


  1. Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.
  2. Beat eggs in one bowl. Place breadcrumbs in another shallow bowl. Dip cut zucchini sticks into egg, then bread crumbs, and then place on baking sheet.
  3. Bake for about 15-20 minutes (oven times vary depending on stick size). Serve with dipping sauce of choice.
