Broiled Grapefruit with Vanilla Coconut Cream

Ingredients:


Broiled Grapefruit:
3 Large Grapefruits
3 Tbsp Coconut Oil
3 Tbsp Maple Syrup
1/2 tsp Sea Salt
Lemon Zest, For Garnish

Vanilla Ginger Coconut Cream:
1/2 tsp Ground Ginger
1/2 tsp Vanilla Extract
1/2 Tbsp Maple Syrup
1 cup Coconut Cream


Directions:


  1. Cut each grapefruit in half and place in baking dish with cut side facing upward. Cut each grapefruit's flesh by tracing the perimeter of each segment with a knife. .
  2. Drizzle maple syrup onto the top and spoon on coconut oil.
  3. Broil on high for 7-10 minutes or until bubbly and browned. When done cooking sprinkle with a pinch of sea salt and allow to cool.
  4. In a small bowl, whisk together ginger, vanilla extract, and maple syrup, letting stand for 5 minutes.
  5. Add in coconut cream and whip with a hand mixer until well combined.
  6. Serve cooled grapefruit with a dollop of ginger vanilla coconut cream and fresh lemon zest.
