Ingredients:


2 cups Whole Wheat Flour
1/2 cup Sugar
1/2 tsp Salt
1 Tbsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Cinnamon
3/4 cup Greek Yogurt, Low-Fat, Plain
6 Tbsp Almond Milk
3 Tbsp Safflower Oil
1 Large Egg, Lightly Beaten
1 tsp Vanilla Extract
2 Large Bananas, Mashed
3 Small Kiwis, Cubed


Directions:


  1. Preheat oven to 375 degrees.
  2. Combine whole wheat flour, sugar, salt, baking powder, baking soda, and cinnamon  in a mixing bowl and set aside.
  3. In a small bowl, mix Greek yogurt, almond milk, safflower oil, egg, vanilla, and mashed bananas until well combined. 
  4. Add wet mixture to the dry mixture. Mix until combined (lumps are okay). Gently stir in kiwi
  5. Pour batter into muffin tins and bake for 25-30 minutes or until lightly browned.
