Mango Chia Pudding

Mango makes for the perfect addition to this creamy, sweet and filling treat.

Ingredients:


1 ½ cup Mango, Frozen
1/4-1/2 cup Water
1 cup Unsweetened Almond Milk
2-3 Pitted Dates
1/4 cup Chia Seeds
1/4 tsp Vanilla Extract
1 Tbsp Slivered Almonds or Try 1 Tbsp Shredded Coconut (Optional)


Directions:


  1. Start blending the mango with 1/4 cup water on high until you have a thick mango puree. Add more water as needed until the puree mixes easily. Pour the mango puree evenly into 2 glasses or bowls. Set in the fridge.
  2. Blend the almond milk and dates until smooth. Pour sweetened milk into a small bowl, and combine with chia seeds and vanilla until it becomes a thick pudding. It will take a few minutes to thicken.
  3. Pour the chia mixture on top of the mango puree in even portions. Allow this to set for 4 hours, or overnight, in fridge. After pudding has set, top with slivered almonds, and/or coconut.
