Ingredients:


3 cups Oats
1 Ripe Banana
1 cup Canned (or Cooked) Pumpkin
3/4 cup Unsweetened Almond Milk
2 Large Eggs
1 tsp Vanilla
1 Tbsp Baking Powder
1 tsp Cinnamon
1/2 tsp Nutmeg
1 Handful Chocolate Chips


Directions:


  1. Preheat oven to 375 degrees and spray a muffin tin with nonstick cooking spray.
  2. In a large bowl, mash banana with pumpkin. Mix in oats.
  3. Mix in almond milk, eggs, vanilla, baking powder, cinnamon, and nutmeg. Lastly, stir in chocolate chips.
  4. Pour batter into muffin tins and bake for about 25 minutes or until lightly browned. Enjoy!
