Ingredients:


1 lb Boneless, Skinless Chicken Breast
1/2 cup Toasted Cashews
2 cups Plain Nonfat Greek Yogurt
1 Tbsp Lemon Juice
2 tsp Curry Powder
1 tsp Minced Garlic
1 tsp Salt
2 Large Carrots, Sliced
4-5 Large Celery Stalks, Sliced
1 cup Dried Cranberries
1 cup Peas
1/4 cup Parsley


Directions:


  1. Bake chicken in oven at 350 degrees for 20 minutes. Allow chicken to cool, and cut into 1/4-1/2 inch pieces.
  2. In a large bowl, combine all ingredients: cashews, Greek yogurt, lemon juice, curry powder, garlic, salt, carrots, celery, cranberries, and peas. Top with parsley and enjoy!
