Tofu Pocket Stew

Ingredients:


14 oz Tofu, Extra Firm
4 cups Broccoli Florets
1 cup Carrots, Thinly Sliced
1 cup Green Beans

Tofu Marinade:
1/8 cup Orange Juice
1/8 cup Tamari or Soy Sauce
1/8 cup Toasted Sesame Oil
1/8 cup Extra Virgin Olive Oil
1 tsp  Ginger, Finely Grated
1 Clove Garlic
2 tsp Maple Syrup


Directions:


  1. Marinate tofu for one hour prior to cooking.
  2. Preheat the grill to medium heat.  Cut 8 sheets of aluminum foil and place two on top of each other for 4 pockets.
  3. Divide marinated tofu and veggies among sheets.
  4. Pull sides of foil inward and seal then roll edges up. Try to leave a little room for heat to circulate, but make sure the packet is sealed.
  5. Grill for 20 to 25 minutes, turning once, or until veggies are crisp tender..
  6. Campfire Directions: Put the foil pocket on hot coals and cook for 35 to 40 minutes or until veggies are tender.
