Ingredients:


1 cup Cooked Quinoa
1/2 cup Toasted Walnuts
1/2 cup Red Onion
1 Clove Garlic
1 Ripe Pear
1 Large Yellow Bell Pepper
1 Large Orange Bell Pepper
1 Large Red Bell Pepper
2 cups Purple Cabbage
1/2 cup Crumbled Feta Cheese
3 Tbsp Olive Oil
2 Tbsp Lemon Juice
1/2 tsp Salt
2 Tbsp Parsley


Directions:


  1. Chop onion, garlic, pear, peppers and cabbage, and combine in a large bowl. Add cooked quinoa, walnuts, and feta cheese, and toss all together.
  2. In a small bowl, combine olive oil, lemon juice, and salt. Dress salad and garnish with chopped parsley.
