Almond Butter Cups

Try our version of a peanut butter cup, including heart-healthy almonds and less sugar than the classic.

Ingredients:


1 cup Almond Meal
2 Tbsp Almond Butter
1 ½ Tbsp Coconut Oil
1 Tbsp Pure Honey
1/4 tsp Cinnamon
1/4 tsp Pure Vanilla Extract
Pinch Coarse Sea Salt or Sea Salt Flakes 

Chocolate Topping
3 Tbsp Melted Coconut Oil

3 Tbsp Pure Maple Syrup
2 Tbsp Unsweetened Cocoa Powder 
Pinch Coarse Sea Salt or Sea Salt Flakes 


Directions:


  1. Combine almond meal, almond butter, melted coconut oil, honey, cinnamon, and vanilla into a bowl, mixing well into a dough-like texture. Add sea salt to taste.
  2. Spray muffin tin with coconut oil. Press mixture into each cup, about ¼ of the way high.
  3. In a separate bowl, mix together melted coconut oil, maple syrup, cocoa and sea salt to taste.
  4. Carefully spoon chocolate mixture over top of the almond butter bases. Add garnish or additional sprinkle of sea salt, if desired.
  5. Freeze on a flat surface for 30-45 minutes.
  6. Pop out of muffin tins, and enjoy!
