Cucumber Roll-Ups

Try these refreshing wraps made with hydrating cucumber instead of your typical tortilla.

Ingredients:


2 Large English Cucumbers
1 cup Greek Yogurt, Low-Fat, Plain
1 Tbsp Curry Powder
1 Tbsp Lime Juice
1 Tbsp Cilantro
4 oz Turkey, Sliced
Dash
Salt and Pepper


Directions:


      1. Slice cucumbers thinly, lengthwise, using a mandolin, vegetable peeler or very carefully with a knife. Lay slices on a paper towel to allow excess moisture to drain. 
      2. Mix Greek yogurt, curry powder, lime juice, salt and pepper until well combined.
      3. Spread yogurt mixture across the cucumber slice, and sprinkle with cilantro.
      4. Roll cucumber carefully and use a toothpick to keep roll secure. Use excess yogurt mixture to dip, and serve immediately.
