Garlic Parmesan Zoodles

A Versatile Veggie: Zucchini

Swap your pasta night for zoodle night, and enjoy these fun and delicious zucchini "noodles".



4 Medium Zucchinis
1 Tbsp Butter
1 Tbsp Olive Oil
2 Cloves Garlic
3/4 cup Parmesan Cheese
1-2 Tbsp Salt


  1. Turn zucchini into noodles (“zoodles”) using a julienne peeler or spiralizer.
  2. Put zoodles into a colander and salt liberally.  Let sit for 20 minutes.
  3. Rinse and pat dry with a paper towel.  
  4. Melt butter, olive oil, and garlic over medium-high heat in a saute pan.  Add zoodles and saute for 4 minutes.
  5. Remove from heat and top with up to ¾ cup of parmesan cheese. Consider the following add ins: cherry tomatoes, mushrooms, or peas.
  6. Top with freshly cracked black pepper, red pepper flakes, or chopped parsley.
