Authentic Greek Tzatziki

This easy tzatziki recipe is so simple, it will become your favorite homemade veggie dip.

Ingredients:


1 large English Cucumber, Peeled and Grated  
2 cups Plain, Non-Fat Greek Yogurt
2 cloves Garlic, Minced
2 Tbsp Lemon Juice
2 Tbsp Fresh Dill, Chopped  
1/2 tsp Sea Salt  
1/4 tsp Ground Black Pepper


Directions:


  1. Using a food processor or by hand, chop the cucumber and add to a small bowl. Add ¼ tsp salt and mix together. Let the cucumber sit for 10-15 minutes to draw the water out of the cucumber. FEED TIP: Place a paper towel in the bottom of the bowl to absorb excess liquid.
  2. In a separate bowl, combine the Greek yogurt with the minced garlic, lemon juice and dill. Stir cucumber into the mixture. Add the remaining ¼ tsp salt and pepper.
  3. Cover and chill before serving.
