Kale, quinoa, and papaya are the perfect pair in this vitamin and flavor packed salad. It's easy to make and is great for lunch or dinner!

1/2 cup Cooked Quinoa
1/2 cup Red Cabbage
1/2 cup Cilantro
1 Medium Carrot
2 Tbsp Walnuts
1 ½ tsp Fresh Ginger, Grated
1/4 cup Fresh Lime Juice
2 Tbsp Rice Vinegar
2 Tbsp Honey
1/2 cup Papaya
1/4 cup Extra Virgin Olive Oil
Remove stems from kale and chop into bite size pieces to add to a large salad bowl. Chop red cabbage, cilantro, and carrot and add to the bowl. Add in quinoa and toss with papaya dressing. Top with walnuts and enjoy!
Combine all vinaigrette ingredients except the olive oil in a blender and blend until smooth. Slowly add in oil as the blender runs so that the dressing emulsifies.
