Southwestern Egg Cups

Perfect for busy mornings or snack time, these egg cups are full of veggies, protein, and flavor.

Ingredients:


2 cups Spinach
1 Tbsp Olive Oil
1/2 Large Onion, Chopped
1 Large Potatoes, Sliced
1 Large Red Bell Pepper
1 tsp Paprika
4-6 Large Eggs


Directions:


  1. In a skillet, cook potatoes and onions until they become soft, about 10 minutes. Add in peppers and spinach.
  2. Mix all remaining ingredients together in large bowl.
  3. Pour by the spoonful into muffin tins, and bake at 350 degrees for about 25 minutes
