Strawberry Balsamic Chicken

Ingredients:


24 oz Boneless, Skinless Chicken Breast
1/2 cup Balsamic Vinegar
1 cup Strawberries, Sliced
2 oz Fresh Basil
Dash of Salt
8 oz Mozzarella Cheese


Directions:


  1. Preheat oven to 400 degrees. Combine chicken breasts and ¼ cup balsamic vinegar in ziplock bag. Refrigerate at least one hour.
  2. Place chicken in a baking dish, season with salt and pepper, and bake for 25-30 minutes, or until chicken is thoroughly cooked (internal temperature of 165 degrees).
  3. Top with strawberry-mozzerella-basil garnish. Drizzle balsamic reduction over top.

    OPTIONAL: To prepare balsamic reduction - Bring 1 cup balsamic vinegar to a simmer on medium-high in a small saucepan. Reduce heat to low, and continue to simmer until vinegar thickens to a syrup-consistency.
