Summer Peach Salad

Mix it up with a lettuce-less salad that includes all your farmer’s market seasonal favorites!




2 Large Beefsteak Tomatoes, Cubed
1 Large Fresh Peach, Pitted and Cubed
1 Large Ear of Corn, Kernels Only
1/4 tsp Kosher Salt
2 oz Crumbled Goat Cheese
1/4 tsp Black Pepper

For Honey Vinaigrette:
2 TBSP Olive Oil
1/2 TBSP Honey
2 TBSP White Balsamic Vinegar
Dash Salt and Pepper


  1. Combine ingredients for Honey Vinaigrette in small bowl and mix. Set aside.
  2. Combine cubed tomatoes, peaches, and corn kernels in a medium bowl. Sprinkle with salt, drizzle with Honey Vinaigrette, and toss to coat.
  3. Top with goat cheese and sprinkle with black pepper. Serve immediately.
