Summer Spinach Salad

This simple salad combines the sweetness of cherries with savory goat cheese for a delicious everyday dish.



1 cup Walnuts, Halved
4 Large Navel Oranges, Peeled
1 Small Shallot
2 TBSP Balsamic Vinegar
2 TBSP Olive Oil 
Pinch Salt and Pepper
4 cups Baby Spinach
1/2 cup Dried Cherries
1/2 cup Crumbled Goat Cheese


  1. Peel white pith from oranges. Cut between membranes to release orange segments into a small bowl.
  2. Combine shallot with balsamic vinegar in bowl.
  3. Whisk in olive oil and season with salt and pepper to taste.
  4. Place orange segments, spinach, and cherries in salad bowl, and toss with dressing.
  5. Add walnuts to salad.
  6. Sprinkle goat cheese on top and serve
