Three Bean Salad

Ingredients:


1/2 lb Green Beans, Blanched
1 (15oz) can  Kidney Beans, Rinsed and Drained
1 (15oz) can  Garbanzo Beans, Rinsed and Drained
1/2 Medium Red Onion, Chopped
1 Large Tomato, Cubed
1 Tbsp Fresh Dill, Chopped
2 Tbsp Fresh Parsley, Chopped
1/2 cup Fresh Feta Cheese
1/2 cup Olive Oil
1/4 cup Lemon Juice
2 Tbsp Grapefruit Juice
1 Inch Fresh Grated Ginger


Directions:


  1. Combine green beans, kidney beans, garbanzo beans, red onion, tomato, dill, parsley and feta cheese in a large bowl.
  2. In a separate bowl, whisk together olive oil, lemon juice, grapefruit juice and fresh grated ginger.
  3. Dress bean mixture with dressing, and allow to marinate in the refrigerator for a few hours or overnight. Enjoy!
