Gluten-Free Buffalo Cauliflower Bites

These vegetarian buffalo cauliflower bites are perfect for the big game, snack time, or anytime!

Ingredients:


1 Head Cauliflower, cut into bite-sized pieces
1/2 Cup Garbanzo Bean Flour
1/2 Cup Cold Water
1 tsp Garlic Powder
1/4 tsp Black Pepper
1/2 tsp Salt
2 TBSP Butter Alternative (such as Earth's Balance Buttery Spread), Melted
2/3 Cup Buffalo Hot Sauce


Directions:


  1. Preheat oven to 450˚ Fahrenheit. Line a baking sheet pan with parchment paper and set aside.
  2. In a large bowl, whisk together garbanzo bean flour, water, garlic powder, salt, and pepper. Add cauliflower florets, and toss to coat.
  3. Spread evenly onto a cookie sheet and place in oven. Bake for 15 minutes. Remove from oven.
  4. In a separate bowl, stir together melted butter alternative and buffalo sauce. Add baked cauliflower, and gently toss to coat. Spread on baking sheet, and bake for 20-30 minutes, or until crispy.
  5. Remove from oven. Let sit for 10 minutes before serving. Serve with reduced-fat blue cheese dressing (if desired) and sliced celery sticks.
