Ingredients:

2 Large Hard Boiled Eggs
2 Tbsp Yogurt (Traditional or Greek)
1 Tbsp Dijon Mustard
Dash Salt and Pepper

Try with:
100% Whole Grain Bread
Whole Grain Crackers
Sliced Vegetables

Directions:

  1. Chop the hard boiled eggs.
  2. Mix eggs with  2 Tbsp plain Greek yogurt and 1 Tbsp dijon mustard. Add a pinch of salt or pepper and serve with 100% whole grain bread, crackers, or sliced vegetables.
Ingredient Choice:

For added richness, use Greek yogurt instead of traditional yogurt. Greek yogurt is thicker and creamier and will hold the egg salad together better.
