Make Ahead Meatballs

This recipe is perfect for those busy weeknights. Simply defrost premade meatballs for a quick and healthy dinner.

Ingredients:


1 ¼ lb Ground Beef, Turkey, Chicken or Other Meat
1 Whole  Egg
1 Clove  Garlic, Minced
1 Tbsp Dried Dill
1/8 tsp Nutmeg, Ground
1/4 tsp Salt
1/4 tsp Pepper


Directions:


  1. In a large bowl, combine egg, meat, garlic, dill, nutmeg, salt, and pepper. Using your hands, combine ingredients until well blended. Be careful not to overwork. Scoop up rounded teaspoonfuls of meat mixture and roll into mini meatballs.
  2. Heat skillet over medium heat on cooktop, spray with cooking spray. Add meatballs and cook, turning frequently, until all sides are browned, about 5-8 minutes.
Egg Replacement:

If allergic to eggs, replace with 2 Tbsp ground flaxseeds mixed with 1/4 cup milk or alternative dairy beverage or other egg replacer.

Storage:

Store meatballs in airtight container for up to 3 days, freeze for up to 3 months.
