Shrimp and Grapefruit Salad with Grapefruit Vinaigrette

Salad Ingredients:
3-4 cups Spinach
1 Large Grapefruit, Cut into Segments
1 Large Orange, Cut into Segments
1 Large Blood or Cara Cara Orange, Cut into Segments
1/2 Small Red Onion, Sliced

Spicy Shrimp Ingredients:
15-20 Large Shrimp, Peeled and Deveined
1 Tbsp Avocado Oil
1 Tbsp Chili Powder
1 tsp Paprika
1/2 tsp Cumin
1/4 tsp Garlic
1/4 tsp Sea Salt

Grapefruit Vinaigrette Ingredients:
1/2 cup Fresh Grapefruit Juice
2 Tbsp Avocado Oil
1 tsp Dijon Mustard
1 tsp Freshly Grated Ginger
1 tsp Honey
1/2 tsp Sea Salt


  1. In a serving bowl, place spinach, grapefruit segments, orange segments, blood orange segments, and red onions.
  2. In a separate bowl,combine shrimp with chili powder, paprika, cumin, garlic, and salt
  3. In a skillet, heat avocado oil and add shrimp . Cook for 8 minutes, tossing frequently. Shrimp will be opaque when fully cooked.
  4. In a small bowl,whisk together fresh grapefruit juice, avocado oil, Dijon mustard, ginger, honey, and sea salt for the vinaigrette.
  5. Add cooked shrimp to salad bowl, tossing with vinaigrette dressing.
