Greek-Style Lamb Burgers

Ingredients:


1 lb. Lamb, Ground
1 cup Packed Baby Spinach Leaves, Finely Chopped
1/2 cup Crumbled Feta
1 Clove Garlic
1/2 tsp Dried Oregano
2 Large Whole Wheat Pita, Split
1 Large Tomato, Sliced

Cucumber-Feta Relish
1 cup Diced Cucumber
1/4 cup Crumbled Feta
1 tsp Fresh Lemon Juice


Directions:


  1. Combine lamb, spinach, feta, garlic and oregano in large bowl. Mix well.
  2. Divide mixture and evenly shape into 4 patties.
  3. Heat grill to medium heat. Grill burgers 10 to 12 minutes or until cooked through, about 160°F.
  4. To prepare Cucumber-Feta Relish, combine cucumber, feta, and lemon juice. Mix to combine. 
  5. Cut burgers in half, place halves in split pitas. Top with Cucumber-Feta Relish. Serve with sliced tomatoes.

 

Lighten Up Tip: Serve burgers atop chopped romaine lettuce. Serve with tomatoes and Cucumber-Feta relish.
