Taco Meatballs

Mexican-Inspired Meatballs

Add something new to Taco Night with these festive meatballs!



1 lb Ground Beef (90% lean), Turkey or Chicken (Breast Meat)
1 cup Shredded Carrots
1/2 cup Shredded Cheddar Cheese
1/4 cup Dry Bread Crumbs or Lightly Crushed Gluten-Free Oats
1 Large Egg
1 Clove Garlic, Minced
2 tsp Chili Powder
1 tsp Ground Cumin
1/2 tsp Salt


  1. Line rimmed baking sheet with aluminum foil. Place cooling rack on baking sheet and spray with nonstick cooking spray. Set aside.
  2. Combine ground meat of your choice and remaining ingredients. Shape mixture into 2-inch rounds. Place on prepared rack.
  3. Bake at 425 degrees for 12 to 15 minutes or until meatballs register 160 degrees on instant read thermometer.
  4. Serve with salsa, whole wheat or whole corn tortillas and taco toppings of your choice.
