Lentil Barley Burger

Ingredients:


1/2 cup Lentils, Dried
1/2 cup Barley, Uncooked
2 Tbsp Plant-Based Cheese Alternative (such as Violife Just Like Mozzarella Shreds)
2 Tbsp Fresh basil, Chopped
1 Clove Garlic, Minced
½ tsp Salt
2 tsp Olive oil
4 Large Romaine Lettuce Leaves
4 Small Grape Tomatoes, Halved


Directions:


  1. Cook lentils and barley according to package directions.
  2. Mash half of the lentils. Stir in remaining lentils and other ingredients.
  3. Divide mixture and evenly shape into 4 patties.
  4. Heat oil in non-stick skillet over medium-high heat. Cook 2 to 3 minutes per side or until lightly browned.
  5. Serve burgers with lettuce and tomatoes or other desired condiments.

 

Lighten Up Tip: Serve burgers atop chopped romaine lettuce. Serve with tomato slices.
